There are a good number of things that you can find and collect in GTA Online to earn yourself some rewards, and even a helpful recruit for doing your big heists. I'm not going to list every single one of them here, but I will link you to pages that did already that work for you.
Stunt Jumps
Like every Grand Theft Auto game, there are tons of ramps or hidden jumps scattered around the map. You get some RP (experience points) for hitting them, and after you've hit all 50 of them, you can earn yourself some new paint colors at Los Santos Customs.
Signal Jammers
If you are following along with the plot lines of Lester or anyone else that has you use the SecuroServ app to track or hack targets, then you may have heard mention of signals being jammed. These jammers may not have anything at all to do with that, however, you can locate 50 of them around the map to earn yourself the best hacker available to you for the heist missions. He will take 10% of the cut, but it's well worth it.
Action Figures
Also hidden around the map around 100 collectible action figures. If you manage to track down all these toys, you will earn yourself some vanity rewards. These include a Superhero Costume, a new hairstyle to match the outfit, and some collectible toys that you can display in your Diamond Casino Penthouse.
Playing Cards
Lastly, there are 52 playing cards hidden around Los Santos. If you can find the entire deck of cards, you will unlock even more vanity items to play around with. These include a High Roller Suit, and a set of rare playing cards for use in your Diamond Casino Penthouse.
